Htun Wai starts with ...
Hi everyone,
I would like to know, how to process or recipe to soften and less hot taste of betel leaf.
My betel leaves are very hot taste (i mean chilli taste) and fragile.

The Betel leaf I grow is very mild flavoured Htun and quite tough.

I use mine in stews and casseroles but a friend wrapped them around a mince mix and cooked them on the BBQ - very nice.

You're a long way from Australia so unfortunately would not be able to send cuttings (customs would probably object).

Oh wow lissa, where do you live? Those betel leaves are amazing! I just put a few cuttings down a couple of weeks ago, dont know if they will survive Melbourne weather.
For the meat wrapped around the leaves (a Vietnamese dish), all you need is 100g of beef and 100g of pork, throw some mince lemongrass in, a glove of garlic, a few finely chopped shallots or spring onion and a table spoon of fish sauce (can be substitute with a tea spoon of salt ). Wrapped a half teaspoon of meat into each leave and place on skewers. Then BBQ. There are more elaborate recipes but I find this one quick and easy.

Thank you for the recipe Birdy. We have a family BBQ breakfast Christmas Day and I'll aim to take some along. Don't suppose you have a pic of how they look on the skewer? Another gardening friend cooked some for us on the BBQ and just put them on whole.

I live in Strathpine, north of Brisbane. Sub tropical unlike your Melbourne climate :) You can grow things there I can't grow here like stone fruit and apples.

The patch in the pic has gradually been increasing in size for about a year or a little more. I have some growing under a Lychee - I was told the Betel liked shade - but it's never done as well. I tend to give my veg garden a drink each day in this hot weather and the Betel definately does better with a regular supply of water.
