Ness starts with ...
Hi I have a Arabica coffee bush that at 3 years has produced an amazing amount of berries. It's all a bit trial and error, but have picked most and am drying them out. My question is how do you know when they are dried enough and after peeling the berry off, what do you do to the seeds?

The seeds are the actual coffee Ness.
I sun dried mine many years ago, but the coffee seemed very weak, not to mention the cyclone(s) that destroyed 4 of my 5 coffee trees! :-(

Brendan , bad luck with the bushes , mate lost several heavy bearing dwarf bushes .
I just did a small roast yesterday . I use a wok outside , as its a smokey job . Approx 7 minutes for my preffered dark 'roast'

How do you grind it? I used to use a very small herb grinder.
How's the taste, strong enough?

Taste is not all that great , the high altitude beans from Costa Rica or Columbia are WAY much better but just so unaffordable for low income workers .. I mix my own roast in with my usual Harris Espresso [ bargain @ $23/kg ]
I now use a hand burr grinder after the very expensive 'Cuisien crap' automatic burnt out .. slow grinding is far superior to the high speed chopping ... I had some cheap and nasty beans that did not taste to bad when hand ground .

I have my first berries here in Adelaide. One berry is red, the rest don't seem to be ripening. Will the ripe on just stay on the bush until the others catch up?

Pictures of Coffee Beans drying along the roadsides in Vietnam. In the Central Highlands one can drive for miles and miles past Coffee plantations hugging steep hillsides.
In spite of there being a lot of Coffee grown there it is impossible to find a decent cup of coffee to drink in any caf
