The Black Truffle originates in France, in the region of Perigord. It is very aromatic and is highly valued with chefs and restaurants. The vast majority of the truffles that are grown in Australia are this one. It is harvested typically from June through to the end of August. It has a black peridium (skin) and the glebra (fruit body) is black with thin white veins. The host tree is a Hazelnut seedling, or Corylus avellana which produce delicious nuts (though you do need a pollinator for nut production), the roots of the tree are inoculated with truffle mycorrhiza. In Europe, truffles thrive in nutrient poor, calcareous (lime) soils and a temperate climate. Therefore to establish a truffiere in Australia you will require an area with a similar climate, including rainfall & winter frosts, sufficient available water for drought proofing, and apply a great deal of lime to replicate the European soil types. They need cold winter temperatures with a few frosts. Hot summer temperatures for initiating truffle formation. Free draining soils, suitable for altering with lime. Sufficient rainfall or irrigation water.

Their fruit is juicy and sweet and have a unique torpedo shape and split in the skin. The most popular olive in Australia, they are ideal for use in cooking or as an olive to eat alone. Available seasonally as a grafted product as well as a cutting grown plant. Prefers cool winters and hot, dry summers. Suggested cross-pollinators are Frantoio and Koroneiki.

Dwarf Mulberry - Red Shahtoot

Much more compact in growth habit than the King White Shahtoot. These delicious sweet fruits can reach 10cm in length. Ideal for back yards and we consider it a must have fruit tree for the back yard. The best way to eat mulberries is fresh from the tree. If some should make it to the kitchen bench they make excellent pies, jams, wines and sauces. Multiple crops are possible by pruning directly after your first crop. Suitable for most regions of Australia, although it can be susceptible to damage from late frosts. The red shahtoot is ideal for growing in pots and containers due to it small growing habit and it is ideal for school gardens as it does not produce fruits that stain and the sweet fruits are very appealing to children.
