The Black Truffle originates in France, in the region of Perigord. It is very aromatic and is highly valued with chefs and restaurants. The vast majority of the truffles that are grown in Australia are this one. It is harvested typically from June through to the end of August. It has a black peridium (skin) and the glebra (fruit body) is black with thin white veins. The host tree is a Hazelnut seedling, or Corylus avellana which produce delicious nuts (though you do need a pollinator for nut production), the roots of the tree are inoculated with truffle mycorrhiza. In Europe, truffles thrive in nutrient poor, calcareous (lime) soils and a temperate climate. Therefore to establish a truffiere in Australia you will require an area with a similar climate, including rainfall & winter frosts, sufficient available water for drought proofing, and apply a great deal of lime to replicate the European soil types. They need cold winter temperatures with a few frosts. Hot summer temperatures for initiating truffle formation. Free draining soils, suitable for altering with lime. Sufficient rainfall or irrigation water.

The female Kerman Pistachio is popular in commercial production and has good flavour with a nice green colour to the kernal. Pistachio trees are best suited to areas with cold winters and hot dry summers, requiring 1000 hours below 7.5 degrees in the winter. Summer and autumn need to be dry to prevent fungal problems. Pistachios are dioecious meaning male and females flowers are produced on separate trees, one of each will be required for fruit set. Spreading habit, wider than it is tall. Pistachios tend toward biennial cropping, meaning they alternately bear lots of nuts one year, then very little the following year

In Korea thinly sliced fruits are combined with sugar and honey to make a thick marmalade like syrup. Yuzu kosho is a spicy Japanese sauce made from green or ripe yellow yuzu zest, chillis and salt. Green Gage is a European type plum with small-medium sized, roundish fruit with greenish-yellow skin. Flesh is amber-yellow coloured, firm, freestone. Good, sweet flavour. Tends to bear biannually. A favourite for cooking, canning and desserts. Ripens in late summer. Mid-season blooming. Forms relatively small tree. High chill.
