It is rarely eaten as a fresh fruit but is used to makes sauces, preserves and a popular yuzu vinegar. In Korea thinly sliced fruits are combined with sugar and honey to make a thick marmalade like syrup. Yuzu kosho is a spicy Japanese sauce made from green or ripe yellow yuzu zest, chillis and salt. Mamey Sapote

Underneath the Mamey's leathery coarse brown skin is a brilliantly coloured, sweet and creamy flesh. The salmon-pink flesh has an exotic flavour similar to sweet pumpkin pie with spice. Unripe fruits can be cooked as a vegetable.

Related to the Chinese Gooseberry or Kiwi it differs in fruit size and cold hardiness. The fruit are generally green, fuzzless, and the size of grapes with great flavour. Cut open, they look much like regular kiwifruit with its small black seeds. Also known as the Hardy Kiwi due to their hardiness to cold.
