It is rarely eaten as a fresh fruit but is used to makes sauces, preserves and a popular yuzu vinegar. In Korea thinly sliced fruits are combined with sugar and honey to make a thick marmalade like syrup. Yuzu kosho is a spicy Japanese sauce made from green or ripe yellow yuzu zest, chillis and salt. Like its cousin Lomandra longifolia the base of the leaves make a tasty snack. Pull the leaves out from the base of the clump and chew the white fleshy base of them, they taste a little like sweet peas. The lusher the growing conditions, the better the taste. Flowers are high in nectar and can be soaked in water for a flavoured, refreshing drink. Mature seed can be ground into a flour to make a damper. The strap-like leaves make great weaving material too.
