The Bianchetto or little white truffle is from Tuscany. Truffles have a pungent aroma that can be loosely described as of fresh earth and sweet mushrooms. Throughout history people have constantly failed to adequately describe the aroma and flavour of a premium truffle, contributing to the mystique of this exotic fungi. Their taste can permeate and enhance many foods such as soups, dips and pates, salads, sauces, dressings, omelettes and main meals. The host tree is the Pine Nut, or Pinus pinea which produces the delicious nuts, they are inoculated with truffle mycorrhiza. The Black Truffle originates in France, in the region of Perigord. It is very aromatic and is highly valued with chefs and restaurants. The vast majority of the truffles that are grown in Australia are this one. It is harvested typically from June through to the end of August. It has a black peridium (skin) and the glebra (fruit body) is black with thin white veins. The host tree is the deciduous English oak, Quercus robur, which produce acorns, and the roots of the tree are inoculated with truffle mycorrhiza. Cherry - Minnie Royal

Minnie Royal cherry is a low chill producer of fruit with stand out flavour. It is a medium to large sized, red cherry with a firm texture. The tree is very productive and has been known to set heavy crops in southern California. Chill hours can be as low as 200 hours and does depend on micro climate. Fruiting can be as early as November. Minnie Royal requires a pollinator which has traditionally been the older Royal Lee variety but flowering times of these 2 can be mismatched in warmer areas and an intermediary is helpful. The newer, self pollinating Royal Crimson blooming can bridge between these two. Bees are the main pollinating insects, so plant flowering herbs to attract them to your garden. Other stonefruit may also provide pollination services. Plant within 5m of each other for best results. Hand pollination could be helpful in years where flowering times are mismatched.
