Karin starts with ...
We planted a black sapote a couple of years ago. We have had some fruit but don't know when to pick it. If we leave it on the tree, it just keeps growing - we've had them get to the size of footballs! If we pick them at this stage, they soften over time but are mostly hollow and fibrous inside (but black). We've tried picking earlier, but they just seem to wilt in the bowl rather than ripen.
Any tips would be much appreciated.

The time to pick them is when you see the calyx lift a little bit, if you pick them too early, they will never ripen.
