Think you're right Happy Earth. There are astringent and non-astringent persimmons, Yarragon Goats. The non-astringent can be eaten as soon as it is fully coloured and the astringent must be left until it is very very soft. Both are delicious.

Thanks Jason and others. There is a fruit at the top of the tree that is orange at the moment so I would say I need to net it for the birds and wait for them to turn orange.

Thanks everyone for your help.

Phil, you will probably need to wait for them to be very soft for them to be ideal to eat also. If you haven't eaten a ripe persimmon before they taste roughly like Apricot jam when ripe
