Have finished harvesting all of the Hawthorn fruits and now making jelly. Found that they make a fantastic and delectable tasting Mayhaw Jelly. The flavour is like a subtle mixture of honey and apples, its simply the best. And it's great spread on toast or on croissants!

Sorry but I can't find any specific information regarding the chill requirements for Hawthorn species. I imagine they don't need as much chill as some of the stone fruits and apples going by their distribution. Crataegus species seem to be common in the Mediterranean climates of North Africa, Greece, Spain, as well as Texas. Those places have drier climates so Hawthorn plants might not like too much humidity though.
Hope this helps. Cheers!
