Tommoz starts with ...
Recently put a New Norcia olive in the ground.
Need to prune it no doubt as it seems too tall and gangly. Are you meant to open up the centre and get 2 or 3 main trunks rather than one?

Personaly as it is probably spindly with leaves on top because it was shaded before you got it. I would leave it as it is for 6 months mulch and water well this summer and back of water a bit late summer and let all those leaves feed and grow a decent healthy rootsystem and make it more drought tolerant. In the mean time it should fill out a bit down low with better sun light. Then prune to the bottom branches mid late Autumn.
Alternativly prune to the lower branches now which is probably the more standard approach.
By the way would you like suggestions on how to kill a photinia hedge.
