Could anyone suggest why my passionfruit fruit is yellow and soft rather than purple and hard? the vine is very healthy with an abundance of flowers and bees.

That's the rootstock you are growing.

I can't see how it could be both vines were purchased from Bunnings with a purple fruited label (one was a Ned Kelly), and what passionfruit grows soft and inedible?

The 5 prong leave is the rootstock, passionfruit has a 3 prong leave.
What happens is you get a shoot growing below the graft and it goes unnoticed and eventually takes over the whole vine.
I recommend never buying grafted passionfuit, in my experience they are a menace, they send up suckers all over the place even after the vine is long gone.
All the non-grafted vines we have planted have given fruit just as quick and there is no weed issue.
