Persimmon Espalier ? (forum)

Hi all
I have planted a Ichikikijiro Persimmon 3 months ago and intend to prune it flat to an espalier or fan.
BUT now i realise that the persimmon sets fruits on the outer margins of the branch. Pruning in the manner of say an apple will cut off all the fruit bearing wood.
IS this correct?
OH what to do? Rip it out and put it in a 1/2 wine barrel?
Has anyone had any joy espaliering a persimmon?
Any pruning tips?
