potato potting mix (forum)

MJ starts with ...
Hi everyone
I recently constructed a potato tower -chicken wire, with a ring of lupin mulch around the edge and then filled in with either potting mix or home made compost in alternating layers, with seed potatoes sitting on top of the potting mix with compost on top of that. There were, umm, 4 layers? Can't remember! Should have taken notes.
Pics below of the tower under construction and then again this morning. You can see the plants sprouting out of the top and sides.
What is the best thing to do with the compost and potting mix once it is finished? I don't have enough compost to waste... Can I use it to grow, say, salad greens for a while, and then put it around the fruit trees? There must still be some goodness left in it. I can refresh with some worm castings or other compost (it will be a while before it is ready to harvest as the plants are still lush and green). Or, should it all just go into the compost to cook a bit longer? Would the resulting compost then be safe for potatoes and tomatoes?
