Yacon
Polymnia sonchifolia
An ancient Incan vegetable related to the sunflower. This vigorous herbaceous plant produces large tubers similar in appearance to sweet potatoes but with a much sweeter taste and crunchy flesh. An extremely hardy perennial growing in hot or cold conditions. however the foliage will die back in time for harvest during winter and re-shoot in the spring.
